A little residual sweetness makes entry on the palate rich and full, but this is immediately reigned in by the region's characteristic acidity. The palate becomes a battle for dominance between acidity and sweetness, which seems to go on forever carrying flavours with it. In true Waitaki style, this wine is all about tension and balance.
