Chardonnay in Central Otago seems to be all about the fruit flavours coming to the fore, whilst at the same time allowing the wine to be delicate and somewhat subtle. In this wine, our second release, we have a fine balance between fruit flavours, softness of texture and refreshing acidity.
The grapes were whole bunch pressed and fermented at cool temperatures using a mixture of wild and introduced yeasts. The wine was made using mainly stainless steel barrels with a small percentage of French oak barrels as well. The stainless steel to retain freshness and precision, the oak providing some softness and flavour.
Fined before filtration and bottling end of March 2013.
